1 kg of chicken breast
1 onion, finely chopped
4 shiitake mushrooms, finely chopped
3 cloves of garlic
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sesame oil
1/2 teaspoon stevia (liquid)
6 iceberg lettuce leaves
Hoisin sauce to rub in lettuce leaves
Cut the onion, mushrooms and garlic in small pieces. Cut the chicken breast into small cubes, I put these in the food processor to get them extra fine. Mix the soy sauce, oyster sauce, sesame oil, rice vinegar in a large bowl and add the cut chicken breast, sliced u200bu200bonion, mushrooms and garlic. Let it marinate for 20 minutes.
Place a wok over high heat and cook all ingredients for about 5 minutes. Stir the chicken apart during cooking.
Cut the raw spinach into thin strips.
Rub the lettuce leaves with some hoisin sauce and make a bed of some spinach. Spoon the chicken in the lettuce leaf and fold it closed.
If you want to make it less Paleo you can also prepare it with rice.
